In the past this wine was produced by combining the Barbera grapes with those of Tocai Rosso and hence its name: Bartòc. Today the name has remained but the choice of grapes is different, the blend is in fact made by combining Merlot with red Tai and Syrah. The result is a red with a wide and pleasant fruity component, a tannin present but soft and never excessive. We choose to offer it young to appreciate its freshness in a full and satisfying drink.
The grapes are grown in different vineyards on the hills of Mossano. The average production is 90 quintals \ ha with a yield of 70% in wine.
We pick the grapes by hand in the middle of September in three differet vineyards. When the grapes arrive in the cellar, after the crushing, they slowly start a natural long fermentation by controlled temperature. The pressure allows to obtain wine and pommace. We keep the wine in a steinless steel tank for about eight months before bottling.
It's a ruby red wine, with pleasant fruity scented notes as wild cherry and raspberry and clear hints from spice and aromatics herbs. The taste is warm and soft, with a good tannin and great longevity.
Try it with: truffle risotto, grilled meats, succulent roasts.
